Knife Skills 101

This class provides a foundation for all culinary education and teaches the correct knife techniques used by all safe and successful cooks. We will demonstrate proper handling and sharpening of knives and students will learn how to slice, dice and mince as well as other classic cuts. The chef will also demonstrate how to cut up a chicken. After class, we will serve a meal prepared with the cut ingredients paired with local wines that can be purchased.

Fresh Pasta

In this class, students will learn the simple art of making fresh pasta, and will practice shaping ravioli, tortellini and agnolini, as well as taglietelle and papardelle. We will make a mushroom filling, a meat filling, a butternut squash filling and a filling of cheese and fresh greens and the following accompanying sauces: Classic Tomato Sauce; Basil pesto; Leek, Sage and Cream Sauce; Brown Butter and Rosemary. We will taste all pasta and sauces paired with local wines that can be purchased.

Sauces 101

The key to many great dishes is the sauce, and Executive Chef Dustin Joseph will help you unlock its secrets. He will lead an interactive demo on simple steps to consistent sauces, including a review of mother sauces, and a demonstration of some quick pan sauces. We?ll cover the basics like ratios, ingredients, proper procedure and storage. Best of all, you?ll create and sample your own sauces, including a beautifully simple tomato sauce and a red wine pan sauce. We will also taste local wines that can be purchased.

Teenage Dogs In Trouble!

Do you have a young dog that is difficult to walk on a lead? Then you have a teenage dog in trouble!

Learn how to teach your dog (6 months-2 yrs) to walk nicely on a lead, sit when told and come when called. The object of the class is to put you, the human, back in control and bring peace and sanity into your relationship with your dog.

Requirements: Proof of current vaccinations, 6 ft. lead, chain training collar, dog treats, scoop bags and paper towels. Do not feed before class. The class is for dogs from 6 months to two years old. Others may be accepted at the instructor?s discretion. Dogs aggressive to other dogs will not be accepted.

Puppy Obedience - Sprinker

The Sirius Puppy training class covers neutering, anti-aggressive training (bite inhibition), house training, socialization to people/dogs,behavior problems (barking, chewing, digging), handling, and basic obedience. Methods involve short training periods with play periods and positive rewards. Limited corrections. Most work done off lead.

Class is for puppies 12-18 weeks old at the start of class. Older puppies MAY be admitted by permission of the instructor. On the first night of class bring proof of vaccination, puppy with non-choke collar and lead, puppy treats, and all members of the family interested in learning to train puppy. Do not feed puppy before class.

Puppy Obedience - Frontier

Training courses are designed to teach you how to establish leadership and to be proactive not reactive. This ABC (Animal Behavior College) class will cover and discuss: nipping and mouthing; unruly behavior in the house; chewing, housetraining; socialization and begin simple training with food lures of sit, stay, and heel.

Class is for puppies 12-18 weeks old at the start of the class. Dogs weighing 20 lbs or less may also attend the class. The first night of class bring proof of vaccination, flat or Martingale collar, 6 foot leash, bags and rags for clean up, treats, and all family members
interested in working with the puppy. Class held in an open air building. Do not feed puppy before class.

Dog and handlers will be taught how to behave in particular situations, not how not to behave. Jazzercise

The class combines effective exercise with jazz dance-based choreography and popular music. Beginning Tai Chi and Qigong

Tai Chi is an ancient Chinese 'moving meditation' practiced by millions throughout the world for its health, fitness, and stress-reducing benefits. Tai Chi consists of fluid, gentle movements done at a relaxed, slow pace. Time magazine called Tai Chi 'the perfect exercise' because it can be practiced by almost anyone regardless of physical ability. Participants will learn a short Tai Chi form along with complimentary Qigong (energy) exercises and meditation. Wear loose, comfortable clothing and shoes.

ZUMBA is a group exercise class that uses a mix of Latin and International music to create a dynamic, fun, and effective cardio workout. Adult CPR/AED & First Aid

The American Red Cross is introducing the newly revised First Aid/CPR/AED program, a comprehensive training program, which is designed to train lay responders to overcome any reluctance to act in emergency situations and to recognize and care for life-threatening respiratory or cardiac emergencies.

Learn the knowledge and skills necessary in an emergency to help sustain life and to minimize pain and the consequences of injury or sudden illness until professional medical help arrives and takes over. Bring a non-refrigerated sack lunch/snack for half hour meal break.

American Red Cross

Adult & Pediatric First Aid/CPR/AED

Class includes first aid for choking; rescue breathing, CPR for adults/children/infants, and use of an automated external defibrillator (AED) for victims of sudden cardiac arrest; control of bleeding; and care for muscle, bone and joint injuries, sudden illness, and burns. Students must successfully complete both written and skills exams to meet OSHA and WISHA requirements. Bring a non-refrigerated sack lunch/snack for half hour meal break.
